Healthier Cooking, No Veggies Required: Gas-to-Induction Stove Retrofits and Indoor Air Quality

Growing attention to indoor air quality (IAQ) has highlighted the significant contribution of gas-burning appliances, particularly cooking stoves, to household pollutant exposure. To assess the potential IAQ benefits and energy savings of switching to an induction stove, the research team conducted an innovative two-year pre/post monitoring study in 11 homes with gas stovetops.

This paper discusses three key methods of IAQ analysis and related results. Using aggregated time series of pollutants during cooking events, we analyze pollutant spikes, release rates, and decay curves.

These findings deepen understanding of how cooking behaviors and appliance choices influence IAQ. We offer recommendations on ways this research can guide appliance upgrade decisions, support electrification programs, and inform future research.
